Ingredients:
For the Paneer & Gravy:
- 250g paneer (cubed)
- 2 tbsp ghee or butter
- 1 bay leaf
- 2 green cardamoms
- 1-inch cinnamon stick
- 1 tsp cumin seeds
- 2 onion (finely chopped)
- 1 tsp ginger-garlic paste
- 4 medium tomatoes (pureed)
- 10-12 cashews (soaked in warm water)
- ½ cup fresh cream
- ½ cup milk
- ½ tsp turmeric powder
- 1 tsp red chili powder
- ½ tsp garam masala
- ½ tsp coriander powder
- ½ tsp sugar (optional)
- Salt to taste
- 2 tbsp curd/yogurt (whisked)
- ¼ tsp saffron strands (soaked in 2 tbsp warm milk)
- 2 tbsp chopped coriander leaves (for garnish)
Instructions for making delicious recipe
- Prepare Cashew Paste
- Blend soaked cashews with a little water to make a smooth paste. Set aside.
- Sauté Spices & Onions
- Heat ghee in a pan. Add bay leaf, cardamoms, cinnamon, and cumin seeds.
- Once fragrant, add chopped onions and sauté until golden brown.
- Cook the Tomato Base
- Add ginger-garlic paste and cook until raw smell disappears.
- Pour in tomato puree, cook for 3-4 minutes until oil separates.
- Add Spices & Cashew Paste
- Mix in turmeric, red chili powder, coriander powder, and salt.
- Add cashew paste and cook for 2 minutes, stirring continuously.
- Make It Creamy
- Add whisked curd and mix well. Pour in milk and cream, stirring constantly.
- Add Paneer & Finish the Dish
- Gently add paneer cubes and mix well.
- Stir in garam masala, saffron milk, and sugar. Cook for 2 minutes.
- Garnish & Serve
- Sprinkle chopped coriander leaves and serve hot with naan, roti, or jeera rice.
